Zucchini Corn Chowder (Light and Creamy)

Ingredients
  

Vegetables
  • 2 medium zucchini diced
  • 1 cup corn fresh or frozen
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
Liquids
  • 4 cups vegetable broth
  • 1 cup milk or non-dairy alternative
Seasonings
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Chop the zucchini, onion, and potatoes. Mince the garlic.
Cook the Vegetables
  1. In a large pot, heat a splash of oil over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the zucchini and potatoes, cooking for about 5 minutes.
Add Broth and Corn
  1. Pour in the vegetable broth and bring to a boil. Add the corn, thyme, salt, and pepper.
Blend the Chowder
  1. Reduce heat and let simmer for 20 minutes until vegetables are tender. Use an immersion blender to puree the chowder until smooth, or blend in batches.
Finish with Milk
  1. Stir in the milk and heat through. Adjust seasoning if necessary.
Serve
  1. Ladle the chowder into bowls and enjoy warm.
