- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, mix together grated zucchini and carrots.
- In another bowl, combine all-purpose flour, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, baking soda, baking powder, ground cinnamon, and salt; mix well.
- Fold the zucchini and carrot mixture into the wet ingredients until combined.
- Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted comes out clean.
- Let the cake cool completely before frosting.
- For the cream cheese frosting, beat together softened cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth.
- Frost the cooled cake with cream cheese frosting.
