Ingredients
  

  • 1 cup arborio rice
  • 2 cups fresh mushrooms (cremini or shiitake), sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (such as Pinot Grigio)
  • 3 cups warm vegetable broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter

Method
 

  1. In a large saucepan over medium heat, combine olive oil and butter. Add onion and garlic; sauté until translucent (3-5 minutes).
  2. Stir in mushrooms and cook until golden brown.
  3. Add arborio rice, stirring for about two minutes until lightly toasted.
  4. Pour in white wine; allow to simmer until most liquid evaporates.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed; continue until the rice is creamy yet al dente (18-20 minutes).
  6. Remove from heat and stir in Parmesan cheese before serving.
