Ingredients
  

Tuna Salad
  • 2 cans tuna drained
  • 1/4 cup mayonnaise adjust to taste
  • 1 stalk celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tablespoon lemon juice freshly squeezed
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Sandwich Assembly
  • 8 slices bread whole grain or your choice
  • 1 cup cucumber sliced thin
  • 4 leaves lettuce optional

Method
 

Prepare Tuna Salad
  1. In a mixing bowl, combine the drained tuna, mayonnaise, chopped celery, red onion, lemon juice, salt, and black pepper. Mix well with a fork until combined.
Assemble Sandwich
  1. Lay out the slices of bread on a clean surface. Spread a generous amount of the tuna salad mixture on four slices.
  2. Top the tuna salad with cucumber slices and lettuce leaves if using. Place the remaining slices of bread on top to complete the sandwiches.
  3. Cut the sandwiches in half and serve immediately or wrap for later.
