Ingredients
  

Zucchini
  • 4 medium zucchini halved lengthwise
Quinoa Filling
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes halved
  • 1 cup black beans cooked and drained
  • 1 cup corn canned or frozen
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped
  • 1 cup shredded cheese for topping

Method
 

Prepare Zucchini
  1. Preheat the oven to 375°F (190°C).
  2. Scoop out the center of the zucchini halves to create boats, leaving about 1/4 inch of flesh.
Cook Quinoa
  1. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
Mix Filling
  1. In a mixing bowl, combine cooked quinoa, cherry tomatoes, black beans, corn, cumin, paprika, salt, pepper, and cilantro.
Stuff Zucchini
  1. Fill each zucchini boat with the quinoa mixture and place them in a baking dish.
  2. Sprinkle shredded cheese on top of each stuffed zucchini.
Bake
  1. Bake in the preheated oven for 20-25 minutes, until zucchini is tender and cheese is melted.
