  • 0.75 cups unsalted butter, softened
  • 4 large eggs

  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream, cold
  • 1 cup powdered sugar
  • 2 tsp vanilla extract for frosting

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and granulated sugar until light and fluffy, about five minutes. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually combine dry ingredients with wet ingredients, alternating with milk until just mixed.
  5. Divide batter evenly into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for ten minutes before transferring to wire racks.
  6. For frosting, whip mascarpone cheese and heavy cream until soft peaks form. Gradually add powdered sugar and vanilla; beat until fluffy.
  7. Once cakes are cool, layer them with frosting and fresh strawberries between layers. Frost the top and sides generously.
