  • 1 whole chicken preferably free-range
  • 2 cups carrots sliced
  • 1 cup celery sliced
  • 1 cup onion chopped
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon thyme dried or fresh
  • 1 teaspoon rosemary dried or fresh

Method
 

Preparation
  1. Clean and cut the chicken into pieces, removing any excess fat.
  2. In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add carrots and celery, cooking for an additional 5 minutes.
  4. Season the chicken pieces with salt, pepper, thyme, and rosemary.
Cooking
  1. Place the seasoned chicken on top of the sautéed vegetables in the pot.
  2. Add enough water to the pot to create steam, but do not submerge the chicken.
  3. Cover the pot with a lid and bring to a simmer. Steam for about 60 minutes, or until the chicken is cooked through.
  4. Check the internal temperature of the chicken; it should reach 165°F (75°C).
Serving
  1. Remove the chicken and vegetables from the pot and serve hot.
  2. Garnish with fresh herbs if desired.
