Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 medium zucchini, sliced
Herbs and Seasoning
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 1/2 cup chicken broth
  • 1 lemon juiced for flavor

Method
 

Cook the Chicken
  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, oregano, and thyme. Add to the skillet and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
Sauté the Vegetables
  1. In the same skillet, add garlic and sauté for 1 minute until fragrant. Add asparagus, zucchini, and cherry tomatoes. Cook for about 5-7 minutes until tender.
Combine and Finish
  1. Return the chicken to the skillet, add spinach, chicken broth, and lemon juice. Cook for an additional 2-3 minutes until spinach is wilted and everything is heated through. Adjust seasoning if necessary.
