  • 4 medium beets peeled and diced
  • 8 whole fresh figs halved
  • 4 cups mixed greens such as arugula and spinach
  • 1 cup goat cheese crumbled
  • 1/4 cup walnuts chopped
Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Roasting Beets
  1. Preheat the oven to 400°F (200°C).
  2. Place the diced beets on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for 25-30 minutes, or until tender.
Preparing the Vinaigrette
  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Assembling the Salad
  1. In a large bowl, combine the roasted beets, mixed greens, figs, goat cheese, and walnuts.
  2. Drizzle the vinaigrette over the salad and toss gently to combine.
  3. Serve immediately.
