  • 3 cups baby spinach
  • 3 cups arugula
  • 1 11-oz. can mandarin oranges drained
  • 1 cup toasted walnuts
  • 3/4 cup dried cranberries
  • 1/2 cup shaved Parmesan
  • 1 pinch flaky sea salt
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. orange juice
  • 1 Tbsp. honey
  • 2 tsp. poppy seeds
  • 1 tsp. Dijon mustard
  • 1/4 cup extra-virgin olive oil
  • Kosher salt to taste
  • freshly ground black pepper to taste

Method
 

  1. In a large mixing bowl, combine baby spinach and arugula.
  2. Add the drained mandarin oranges, toasted walnuts, dried cranberries, and shaved Parmesan to the greens.
  3. In a separate small bowl, whisk together the flaky sea salt, red wine vinegar, orange juice, honey, poppy seeds, Dijon mustard, and extra-virgin olive oil until well blended.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Season with kosher salt and freshly ground black pepper to taste.
