  • 2 tablespoons soy sauce
  • 1.5 tablespoons maple syrup
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha optional
  • 1 tablespoon freshly grated ginger
  • 1 clove garlic minced
  • 5 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 medium red bell pepper sliced into thin strips
  • 0.5 cup chopped scallions
  • 0.25 cup chopped fresh cilantro
  • 1 teaspoon toasted sesame seeds

Method
 

  1. In a large bowl, whisk together rice vinegar, soy sauce, maple syrup, toasted sesame oil, and sriracha (if using).
  2. Add grated ginger and minced garlic to the bowl and mix well.
  3. Toss in shredded cabbage, shredded carrots, sliced bell pepper, chopped scallions, and chopped cilantro.
  4. Mix until all vegetables are evenly coated with the dressing.
  5. Sprinkle toasted sesame seeds on top before serving.
