Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup protein powder vanilla or unflavored
Wet Ingredients
  • 2 medium ripe bananas mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt plain
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, combine the dry ingredients: whole wheat flour, baking powder, baking soda, salt, and protein powder.
  3. In another bowl, mix the wet ingredients: mashed bananas, honey, Greek yogurt, eggs, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
