  • 150 ml water
  • 50 ml soy sauce
  • 30 ml mirin
  • 1 tsp sugar
  • 1 tbsp katsuobushi optional (dried bonito flakes)

Method
 

  1. Boil the eggs for 7 minutes, then transfer them to an ice bath to cool.
  2. Once cooled, gently peel the eggs.
  3. In a bowl, combine vinegar, water, soy sauce, mirin, sugar, and katsuobushi (if using) to create the marinade.
  4. Submerge the peeled eggs in the marinade and refrigerate for at least 12 hours for best flavor.
