Ingredients
  

Soup Base
  • 4 large Onions sliced
  • 4 tablespoons Butter unsalted
  • 1 teaspoon Sugar to caramelize onions
  • 8 cups Beef Broth or vegetable broth for vegetarian option
  • 1 teaspoon Thyme dried
Toppings
  • 4 slices Baguette toasted
  • 1 cup Gruyère Cheese shredded

Method
 

Prepare the Soup
  1. In a large soup pot, melt the butter over medium heat. Add the sliced onions and sugar, cooking until the onions are caramelized, about 30 minutes.
  2. Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for an additional 15 minutes.
Assemble and Bake
  1. Preheat the oven to 350°F (175°C).
  2. Ladle the soup into oven-safe cups or bowls. Top each with a slice of toasted baguette and a generous amount of Gruyère cheese.
  3. Place the cups on a baking sheet and bake in the preheated oven until the cheese is bubbly and golden, about 10-15 minutes.

Notes

For a vegetarian version, use vegetable broth instead of beef broth.
