Ingredients

Dough
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • 3/4 cup warm water about 110°F
  • 1 tablespoon olive oil
Topping
  • 2 medium onions sliced thinly
  • 2 tablespoons butter for caramelizing
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon sea salt to taste

Method

Prepare the Dough
  1. In a mixing bowl, combine the flour, salt, and yeast. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  3. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Prepare the Onions
  1. In a skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes.
  2. Season with black pepper and sea salt, then remove from heat and set aside.
Cook the Flatbread
  1. Preheat a skillet or griddle over medium-high heat.
  2. Divide the risen dough into 4 equal portions. Roll each portion into a flat circle about 1/4 inch thick.
  3. Place the rolled dough onto the hot skillet and cook for about 2-3 minutes on each side until golden brown.
  4. Top each flatbread with the caramelized onions while still warm.
