Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold
  • 1 pinch salt
  • ice-cold water as needed
Filling
  • 1/2 cup granulated sugar or brown sugar
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and cold butter until crumbly.
  2. Gradually add a pinch of salt and ice-cold water until dough forms. Refrigerate for 30 minutes.
  3. Roll out the dough to 1/4 inch thick, cut circles, and press into muffin tins.
  4. In another bowl, whisk together sugar, eggs, heavy cream, and vanilla.
  5. Pour filling into shells until almost full.
  6. Bake for 20-25 minutes until filling is set and slightly caramelized. Cool before serving.
