Ingredients
  

Cupcake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tablespoon fresh mint leaves finely chopped
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Mint Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh mint leaves finely chopped
  • 1 teaspoon green food coloring optional
Garnish
  • 4 sprigs fresh mint
  • 1/4 cup crushed ice for decoration

Method
 

Prepare Cupcakes
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, vanilla extract, bourbon, and chopped mint leaves.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow cupcakes to cool completely before frosting.
Prepare Frosting
  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sugar, mixing on low speed until combined.
  3. Add the heavy cream, vanilla extract, chopped mint leaves, and food coloring (if using).
  4. Beat on high speed until the frosting is light and fluffy.
Assemble Cupcakes
  1. Frost the cooled cupcakes with the mint frosting using a spatula or piping bag.
  2. Garnish each cupcake with a sprig of fresh mint and a sprinkle of crushed ice.
