Ingredients
  

Crust
  • 1 package pre-made pastry dough or phyllo dough
Filling
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or Swiss
  • 1 cup diced vegetables such as bell peppers, spinach, or onions
  • 1 cup cooked meat such as bacon or ham (optional)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon herbs such as thyme or parsley

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pastry dough and cut into circles to fit the muffin tin.
  3. Press the dough circles into the muffin tin cups.
Make the Filling
  1. In a mixing bowl, whisk together the eggs and heavy cream.
  2. Stir in the cheese, vegetables, meat (if using), salt, pepper, and herbs.
Bake
  1. Pour the filling into the prepared crusts, filling each cup about 3/4 full.
  2. Bake in the preheated oven for 20-25 minutes, or until the filling is set and the tops are golden.
  3. Allow to cool slightly before removing from the muffin tin.
