Ingredients
  

Meringue
  • 4 large Egg Whites At room temperature
  • 1 cup Granulated Sugar Superfine sugar works best
  • 1 teaspoon White Vinegar To stabilize the meringue
  • 1 teaspoon Cornstarch For texture
Topping
  • 1 cup Heavy Whipping Cream Chilled
  • 2 tablespoons Powdered Sugar For sweetening the cream
  • 1 cup Mixed Fresh Fruits Such as berries, kiwi, and passion fruit

Method
 

Prepare Meringue
  1. Preheat the oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the egg whites until soft peaks form.
  3. Gradually add the granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.
  4. Gently fold in the vinegar and cornstarch.
  5. Spoon the meringue mixture onto the prepared baking sheet, forming 4 small nests.
  6. Bake for 60 minutes, then turn off the oven and let the meringues cool inside for at least 1 hour.
Assemble Pavlovas
  1. In a chilled mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
  2. Once the meringues are cool, carefully remove them from the parchment paper.
  3. Top each meringue nest with whipped cream and arrange mixed fresh fruits on top.
  4. Serve immediately and enjoy!
