Ingredients
  

Pancake Batter
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk or buttermilk
  • 1 large egg
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
Toppings
  • 1/2 cup maple syrup
  • 1/2 cup fresh berries strawberries, blueberries, or raspberries
  • 1/4 cup whipped cream optional

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
Cook the Pancakes
  1. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  2. Pour a small amount of batter (about 2 tablespoons) onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then flip and cook until golden brown, about 1-2 minutes per side.
Assemble and Serve
  1. Stack the mini pancakes on a plate, drizzle with maple syrup, and top with fresh berries and whipped cream if desired.
