Ingredients
  

For the Gnocchi
  • 2 cups potato gnocchi store-bought or homemade
For the Lemon Cream Sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 lemon zest
  • 1/4 cup lemon juice freshly squeezed
  • 1/2 cup parmesan cheese grated
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.
Make the Lemon Cream Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the heavy cream, lemon zest, and lemon juice. Stir to combine and let simmer for 3-5 minutes until slightly thickened.
  3. Stir in the grated parmesan cheese, salt, and black pepper. Mix until the cheese is melted and the sauce is creamy.
Combine and Serve
  1. Add the cooked gnocchi to the sauce and gently toss to coat. Cook for an additional 1-2 minutes to heat through.
  2. Serve immediately, garnished with chopped parsley.

Notes

For a lighter version, you can substitute half-and-half for the heavy cream.
