Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 4 pieces chicken drumsticks bone-in, skin-on
Marinade
  • 2 cups buttermilk for marinating chicken
  • 1 tablespoon hot sauce optional for spice
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for seasoning
Breading
  • 2 cups all-purpose flour for coating
  • 1 tablespoon paprika for flavor and color
  • 1 teaspoon garlic powder for flavor
  • 1 teaspoon onion powder for flavor
  • 1 teaspoon salt for seasoning
  • 1 teaspoon black pepper for seasoning
Frying
  • 4 cups vegetable oil for frying

Method
 

Marinate the Chicken
  1. In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.
Prepare the Breading
  1. In another bowl, mix flour, paprika, garlic powder, onion powder, salt, and black pepper. Set aside.
Bread the Chicken
  1. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off excess flour.
Heat the Oil
  1. In a deep fryer or large skillet, heat vegetable oil to 350°F (175°C).
Fry the Chicken
  1. Carefully add chicken pieces to the hot oil, cooking in batches if necessary. Fry for about 12-15 minutes per side, or until golden brown and internal temperature reaches 165°F (75°C).
Drain and Serve
  1. Remove chicken from oil and place on paper towels to drain excess oil. Serve hot.
