Preparation
- In a bowl, combine lukewarm milk, lukewarm water, active dry yeast, and honey. Let it sit for a few minutes until bubbling.
- Add melted and cooled butter, white sugar, AP flour, and salt to the mixture. Knead until a dough forms.
- Let the dough rise in a warm place until doubled in size.
- Roll the dough out into a rectangle.
- Place the cold butter for tourrage in the center and fold the dough over it.
- Roll out the dough again, then fold into thirds, repeating this process a few times.
- Shape the dough into croissants and place on a baking sheet.
- Brush with egg yolk mixed with milk/cream.
- Bake in a preheated oven at 200°C for 25 minutes or until golden brown.
