Prepare the Batter
- In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the wet ingredients: Greek yogurt, egg, milk, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; some lumps are okay.
Cook the Pancakes
- Heat a griddle or frying pan over medium heat and add a little butter to grease the surface.
- Pour about 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, adding more butter as needed.
Serve
- Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
