Reduce the Fresh Apple Cider
- In a small saucepan, combine 2 cups of pure apple cider and the 2 cinnamon sticks. Bring to a gentle boil over medium heat, then simmer uncovered for 20 to 25 minutes until reduced to exactly 3/4 cup plus 2 tablespoons. Discard cinnamon sticks and let the concentrated cider cool completely to room temperature. (Reserve 2 tablespoons of this reduced cider for the glaze!).
Whisk Dry Ingredients & Cream Butter
- Preheat oven to 350°F (175°C). Grease a standard 10-to-12 cup metal bundt pan generously with baking spray with flour (or brush thoroughly with homemade cake goop) to ensure effortless release.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, allspice, and ginger until evenly blended.
- In a stand mixer fitted with the paddle attachment (or using a hand mixer), beat the softened butter, brown sugar, and granulated sugar on medium-high speed for 3 to 4 minutes until light, pale, and fluffy.
- Add eggs one at a time, beating well after each addition. Beat in the 2 teaspoons of vanilla extract.
Alternate Wet & Dry, Then Bake
- Whisk the cooled reduced apple cider (3/4 cup) with the 1/2 cup of buttermilk in a measuring cup.
- With the mixer on low speed, add the flour mixture in three additions alternating with the cider-buttermilk liquid in two additions, beginning and ending with dry ingredients. Mix just until combined—do not over-mix.
- Spoon the thick batter evenly into the prepared bundt pan. Smooth the top with a spatula and tap the pan firmly on the counter twice to release air pockets.
- Bake at 350°F (175°C) for 48 to 52 minutes, or until a wooden skewer inserted into the deepest part of the cake comes out clean with just a few moist crumbs.
- Cool in the pan on a wire rack for exactly 10 minutes, then invert onto a wire rack to release the cake.
Cinnamon Sugar Coating & Cider Glaze
- In a small bowl, whisk together the 2/3 cup granulated sugar and 1 1/2 teaspoons cinnamon.
- While the cake is still slightly warm, brush the entire surface generously with the 4 tablespoons of melted butter using a pastry brush. Immediately sprinkle and press the cinnamon-sugar all over the fluted ridges until fully crusted.
- Whisk together the confectioners sugar, reserved 2 tablespoons of reduced cider, and vanilla extract until a thick, smooth drizzling glaze forms. Drizzle generously over the fluted peaks of the cake. Let glaze set for 15 minutes before slicing and enjoying!
