Ingredients
  

Fritter Mixture
  • 2 cups fresh corn kernels about 3-4 ears of corn
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves chopped
  • 2 large eggs beaten
  • 1/4 cup milk
  • 1/4 cup green onions chopped
For Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Fritter Mixture
  1. In a mixing bowl, combine the corn, flour, baking powder, salt, and black pepper.
  2. Add the chopped basil, beaten eggs, milk, and green onions. Mix until well combined.
Fry the Fritters
  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Drop spoonfuls of the fritter mixture into the hot oil, flattening them slightly with the spatula.
  3. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  4. Remove from the pan and drain on paper towels.
Serve
  1. Serve warm with your favorite dipping sauce.
