Ingredients
  

Dry Spiced Flour Mixture
  • 2 cups all-purpose flour spooned and leveled
  • 3 tbsp dark brown sugar packed, adds rich caramel warmth
  • 2 tsp baking powder for maximum cloud-like rise
  • 1 tsp baking soda reacts with acidic buttermilk
  • 1/2 tsp fine sea salt balances the sweetness
  • 2 tsp ground cinnamon warm spice note
  • 1 tsp ground ginger adds a delicate zing
  • 1/2 tsp ground nutmeg freshly grated
  • 1/4 tsp ground allspice or ground cloves
Wet Pumpkin Buttermilk Batter
  • 1 1/2 cups cultured buttermilk room temperature, full-fat or low-fat
  • 1 cup pure pumpkin puree canned 100% pure pumpkin (not pumpkin pie mix)
  • 2 large eggs room temperature, lightly beaten
  • 3 tbsp unsalted butter melted and cooled slightly, plus more for the griddle
  • 1 1/2 tsp pure vanilla extract for fragrant bakery aroma
Whipped Cinnamon Butter & Toppings
  • 4 tbsp unsalted butter softened to room temperature
  • 1 tbsp pure honey or maple syrup
  • 1/2 tsp ground cinnamon whipped into the butter
  • 1/2 cup pure maple syrup Grade A amber, warmed before serving
  • 1/3 cup toasted pecans roughly chopped for crunch

Method
 

Whisk Dry & Wet Mixtures
  1. In a large mixing bowl, thoroughly whisk together all-purpose flour, dark brown sugar, baking powder, baking soda, fine sea salt, ground cinnamon, ginger, nutmeg, and allspice until evenly combined.
  2. In a separate medium bowl, whisk together the cultured buttermilk, pure pumpkin puree, beaten eggs, melted butter, and vanilla extract until completely smooth and vibrant orange.
Gently Fold the Batter (Don't Overmix!)
  1. Pour the wet pumpkin mixture into the dry flour mixture. Using a rubber spatula, gently fold just until incorporated and no dry flour streaks remain. A few small lumps are perfectly fine! Let the thick batter rest on the counter for 10 minutes (this allows the baking soda and buttermilk to activate and build airy fluffiness).
Cook on Griddle to Golden Cloud Perfection
  1. Heat a heavy cast-iron griddle or large nonstick skillet over medium-low heat. Brush lightly with melted butter.
  2. Scoop 1/3 cup of batter per pancake onto the griddle, spreading slightly into a 4-inch round with the back of the scoop. Cook for 3 to 4 minutes until bubbles appear on the surface and the edges look set and matte.
  3. Gently flip with a spatula and cook the other side for another 2 to 3 minutes until golden brown, puffed, and cooked through the center. Transfer to a warm plate and repeat with remaining batter.
Whip Cinnamon Butter & Serve
  1. In a small bowl, whip the 4 tablespoons of softened butter with 1 tablespoon honey and 1/2 teaspoon cinnamon until light and creamy.
  2. Stack 3 warm pancakes per serving plate. Crown with a generous dollop of melting whipped cinnamon butter, scatter toasted chopped pecans over top, and pour warm pure maple syrup lavishly down the sides. Enjoy immediately!
