Ingredients
  

Duck
  • 1 whole duck about 4-5 pounds
Fig and Orange Glaze
  • 1 cup fresh figs chopped
  • 1/2 cup orange juice freshly squeezed
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Duck
  1. Preheat the oven to 375°F (190°C). Rinse the duck under cold water and pat dry with paper towels.
  2. Season the duck inside and out with salt and pepper.
  3. Place the duck breast side up in a roasting pan.
Make the Glaze
  1. In a saucepan, combine chopped figs, orange juice, honey, soy sauce, thyme, salt, and pepper.
  2. Bring to a simmer over medium heat and cook for about 10 minutes, until the figs are soft and the mixture thickens.
Roast the Duck
  1. Baste the duck with the fig and orange glaze.
  2. Roast in the preheated oven for about 60 minutes, basting every 15 minutes, until the internal temperature reaches 165°F (74°C).
Serve
  1. Remove the duck from the oven and let it rest for 10 minutes before carving.
  2. Serve with additional glaze drizzled over the top.
