Method
Prepare the Duck
- Preheat the oven to 375°F (190°C). Rinse the duck under cold water and pat dry with paper towels.
- Season the duck inside and out with salt and pepper.
- Place the duck breast side up in a roasting pan.
Make the Glaze
- In a saucepan, combine chopped figs, orange juice, honey, soy sauce, thyme, salt, and pepper.
- Bring to a simmer over medium heat and cook for about 10 minutes, until the figs are soft and the mixture thickens.
Roast the Duck
- Baste the duck with the fig and orange glaze.
- Roast in the preheated oven for about 60 minutes, basting every 15 minutes, until the internal temperature reaches 165°F (74°C).
Serve
- Remove the duck from the oven and let it rest for 10 minutes before carving.
- Serve with additional glaze drizzled over the top.
