Ingredients
  

Falafel
  • 1 cup Dried chickpeas Soaked overnight
  • 1 small Onion Chopped
  • 2 cloves Garlic Minced
  • 1 bunch Fresh parsley Chopped
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Baking powder
Tahini Sauce
  • 1/2 cup Tahini
  • 1/4 cup Water Adjust for consistency
  • 2 tbsp Lemon juice
  • 1 clove Garlic Minced
Pita and Vegetables
  • 4 pieces Pita bread
  • 1 cup Lettuce Shredded
  • 1 cup Tomato Sliced
  • 1 cup Cucumber Sliced

Method
 

Prepare the Falafel
  1. Drain and rinse the soaked chickpeas. Place them in a food processor with onion, garlic, parsley, cumin, coriander, baking powder, and salt. Pulse until a coarse mixture forms.
  2. Form the mixture into small balls or patties.
  3. Heat oil in a frying pan over medium heat. Fry the falafel until golden brown on all sides, about 3-4 minutes per side.
Make the Tahini Sauce
  1. In a mixing bowl, combine tahini, water, lemon juice, minced garlic, and salt. Whisk until smooth and adjust water for desired consistency.
Assemble the Sandwich
  1. Warm the pita bread in a dry pan or microwave. Cut open the pita and stuff it with lettuce, tomato, cucumber, and several falafel balls.
  2. Drizzle tahini sauce over the filled pita and serve immediately.

Notes

For a spicier version, add some cayenne pepper to the falafel mixture.
