Ingredients
  

Eggplant
  • 1 large eggplant sliced into 1/2 inch rounds
Feta Cheese
  • 100 grams feta cheese crumbled
Olive Spread
  • 1 cup mixed olives pitted and chopped
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
Bread
  • 4 slices whole grain bread or your choice of bread
Seasoning
  • 1 teaspoon salt for eggplant
  • 1 teaspoon black pepper for eggplant
  • 1 teaspoon dried oregano for eggplant

Method
 

Prepare the Eggplant
  1. Preheat the oven to 400°F (200°C).
  2. Sprinkle the eggplant slices with salt and let them sit for 15 minutes to draw out moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel.
  4. Place the eggplant on a baking sheet, drizzle with olive oil, and sprinkle with black pepper and oregano.
  5. Roast in the oven for 25 minutes, flipping halfway through, until golden and tender.
Make the Olive Spread
  1. In a food processor, combine the chopped olives, olive oil, minced garlic, and lemon juice.
  2. Pulse until the mixture is well combined but still slightly chunky.
Assemble the Sandwich
  1. Spread a generous amount of the olive spread on each slice of bread.
  2. Layer the roasted eggplant and crumbled feta cheese on top of the olive spread.
  3. Top with another slice of bread and press down gently.
  4. Cut the sandwich in half and serve immediately.
