Ingredients
  

Sandwich Components
  • 4 slices Whole grain bread or bread of choice
  • 2 large Avocados ripe
  • 4 large Eggs preferably free-range
  • 1 tablespoon Olive oil for frying
  • 1 tablespoon Lemon juice for avocado
Optional Toppings
  • 4 slices Cheese such as cheddar or pepper jack
  • 1 cup Spinach fresh
  • 1 tomato sliced

Method
 

Prepare the Avocado
  1. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and mix in lemon juice, salt, and pepper to taste.
Cook the Eggs
  1. Heat olive oil in a skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.
Toast the Bread
  1. While the eggs are cooking, toast the bread slices until golden brown.
Assemble the Sandwich
  1. Spread the mashed avocado on each slice of toasted bread. Top with a cooked egg and any optional toppings like cheese, spinach, or tomato. Close the sandwich with another slice of bread.
