  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
Coating & Topping
  • 1 cup white chocolate chips
  • 1/4 cup rainbow sprinkles for coating

Method
 

Preparation
  1. Prepare the strawberries by washing and hulling them. Pat dry to remove excess moisture.
  2. In a mixing bowl, mash the strawberries into a chunky consistency. Add mascarpone, powdered sugar, and vanilla extract; mix until smooth.
  3. Chill the mixture for about an hour to firm it up.
Forming Truffles
  1. Scoop tablespoon-sized portions and roll them into balls; place on a parchment-lined baking sheet.
Coating
  1. Melt white chocolate chips in short bursts in the microwave until smooth.
  2. Dip each truffle into melted white chocolate, allowing excess chocolate to drip off, then roll in sprinkles while still wet. Set on parchment paper to cool.
