Ingredients
  

  • 2 cups diced ham
  • 2 cups fresh corn kernels
  • 2 medium Russet potatoes diced
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme fresh or dried
  • salt to taste
  • pepper to taste
  • 1 teaspoon paprika

Method
 

  1. In a large pot, melt butter over medium heat. Add onions and garlic, sautéing until softened.
  2. Add diced ham and cook for a few minutes until heated through.
  3. Stir in the diced potatoes, chicken broth, and thyme. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Add corn, heavy cream, salt, pepper, and paprika. Stir well and heat through.
  6. Serve hot.
