- Soak the beans overnight in water. Drain before using.
- In a large pot over medium heat, cook the bacon until crispy. Remove and set aside.
- In the same pot, brown the pork sausage until golden. Add onions and garlic; sauté until soft.
- Return bacon to the pot; mix in soaked beans, duck confit (or chicken), Herbs de Provence, and chicken broth.
- Bring to a gentle simmer; cover partially and cook on low heat for about 2 hours until beans are tender.
- Adjust seasoning with salt and pepper before serving hot with crusty bread.
