  • 1 cup dried Great Northern or cannellini beans soaked overnight
  • 4 oz pork sausage sliced
  • 4 oz duck confit or chicken thighs, shredded
  • 4 strips thick-cut bacon chopped
Vegetables and Seasonings
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tsp Herbs de Provence
  • 4 cups low-sodium chicken broth

Cooking Steps
  1. Soak the beans overnight in water. Drain before using.
  2. In a large pot over medium heat, cook the bacon until crispy. Remove and set aside.
  3. In the same pot, brown the pork sausage until golden. Add onions and garlic; sauté until soft.
  4. Return bacon to the pot; mix in soaked beans, duck confit (or chicken), Herbs de Provence, and chicken broth.
  5. Bring to a gentle simmer; cover partially and cook on low heat for about 2 hours until beans are tender.
  6. Adjust seasoning with salt and pepper before serving hot with crusty bread.
