Ingredients
  

Crispy Tofu
  • 14 oz firm tofu pressed and drained
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil for baking
Summer Slaw
  • 2 cups green cabbage shredded
  • 1 cup carrots shredded
  • 1 cup red bell pepper thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup green onions sliced
  • 3 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp sesame seeds for garnish
Serving
  • 1 cup cooked quinoa or rice as base

Method
 

Prepare the Tofu
  1. Preheat the oven to 400°F (200°C). Cut the pressed tofu into cubes and toss with soy sauce and sesame oil.
  2. Sprinkle cornstarch over the tofu and toss until evenly coated.
  3. Arrange the tofu on a baking sheet and drizzle with vegetable oil. Bake for 25 minutes, flipping halfway through, until golden and crispy.
Make the Slaw
  1. In a large mixing bowl, combine shredded cabbage, carrots, red bell pepper, cilantro, and green onions.
  2. In a small bowl, whisk together rice vinegar and maple syrup. Pour over the slaw and toss to combine.
Assemble the Bowl
  1. In each serving bowl, place a base of cooked quinoa or rice. Top with crispy tofu and summer slaw.
  2. Garnish with sesame seeds and serve immediately.
