Ingredients
  

For the Chicken
  • 4 pieces boneless chicken breasts pounded to an even thickness
  • 1 cup buttermilk for marinating
  • 1 cup all-purpose flour for coating
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups vegetable oil for frying
For the Garlic Mayo
  • 1/2 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
For Assembly
  • 4 buns burger buns toasted
  • 4 leaves romaine lettuce
  • 1 tomato sliced

Method
 

Prepare the Chicken
  1. Marinate the chicken breasts in buttermilk for at least 30 minutes.
  2. In a bowl, mix flour, paprika, garlic powder, salt, and pepper.
  3. Remove chicken from buttermilk, allowing excess to drip off, then coat in the flour mixture.
Fry the Chicken
  1. Heat vegetable oil in a frying pan over medium-high heat.
  2. Fry the coated chicken breasts for about 5-7 minutes on each side or until golden brown and cooked through.
  3. Remove and drain on paper towels.
Make the Garlic Mayo
  1. In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well.
Assemble the Sandwich
  1. Spread garlic mayo on the bottom half of each toasted bun.
  2. Add a piece of fried chicken, a lettuce leaf, and a slice of tomato.
  3. Top with the other half of the bun and serve immediately.

Notes

For extra crunch, you can double coat the chicken by dipping it back in buttermilk and then in the flour mixture again before frying.
