Salmon and Salsa
  • 4 fillets Salmon (skin-on)
  • 1/2 cup BBQ sauce
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • 2 medium Fresh peaches
  • 2 Jalapeños
  • 1/2 medium Red onion
  • 1/4 cup Cilantro
  • 1 tablespoon Lime juice
  • 2 cups Cooked rice or quinoa
  • 2 Lime wedges

Method
 

Grilling and Salsa Preparation
  1. Preheat the grill or a grill pan over medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Grill the salmon skin-side down until crispy, about 6-8 minutes.
  4. While the salmon is grilling, prepare the roasted jalapeño peach salsa.
  5. Roast the jalapeños over the flame or in a hot oven until charred.
  6. Chop the roasted jalapeños, fresh peaches, red onion, cilantro, and combine in a bowl.
  7. Add lime juice to the salsa and mix well.
  8. Serve the grilled salmon over cooked rice or quinoa, topped with the jalapeño peach salsa and lime wedges.
