Ingredients
  

Base Ingredients
  • 1 cup wild rice rinsed
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 2 carrots diced
  • 2 stalks celery diced
Creamy Mixture
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon soy sauce

Method
 

Prepare the Base
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the sliced mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
  3. Stir in the wild rice and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 30-35 minutes, or until the rice is tender.
Finish the Soup
  1. Once the rice is cooked, stir in the heavy cream, thyme, soy sauce, salt, and pepper. Cook for an additional 5 minutes to heat through.
  2. If desired, blend a portion of the soup for a creamier texture, then stir back into the pot.
  3. Serve hot, garnished with fresh herbs if desired.
