Ingredients
  

Soup Base
  • 1 cup wild rice rinsed
  • 4 cups vegetable broth
  • 1 cup mushrooms sliced, any variety
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Creamy Mixture
  • 1 cup heavy cream
  • 1 tablespoon cornstarch optional, for thickening
  • 1 cup spinach fresh, chopped

Method
 

Prepare the Soup Base
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and sliced mushrooms, cooking until mushrooms are tender.
  3. Stir in wild rice, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30-35 minutes until rice is tender.
Add Cream and Spinach
  1. Once the rice is cooked, stir in the heavy cream and chopped spinach.
  2. If desired, mix cornstarch with a little water and add to the soup to thicken. Cook for an additional 5 minutes.
  3. Adjust seasoning with more salt and pepper if needed. Serve hot.
