Ingredients

Dry Ingredients
  • 2 cups old-fashioned rolled oats gluten-free if desired
  • 1 tsp baking powder for a fluffy soufflé-like rise
  • 1 1/2 tsp ground Saigon cinnamon rich fragrant autumn spice
  • 1/4 tsp ground nutmeg freshly grated preferred
  • 1/4 tsp ground ginger for gentle background warmth
  • 1/2 tsp fine sea salt enhances sweetness
  • 1/2 cup raw pecans, roughly chopped divided (half in oats, half on top)
Wet Ingredients & Fresh Orchard Apples
  • 2 cups creamy oat milk or whole milk / unsweetened almond milk
  • 1/3 cup pure amber maple syrup Grade A pure maple
  • 2 large eggs room temperature (or flax eggs for vegan)
  • 3 tbsp unsalted butter, melted or melted coconut oil
  • 1 tbsp pure vanilla extract bourbon vanilla
  • 2 medium Honeycrisp or Pink Lady apples peeled and diced into 1/2-inch cubes
  • 1 tbsp turbinado sugar or dark brown sugar for crackly caramelized topping

Method

Preheat & Whisk Dry Base
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with butter or cooking spray. In a large bowl, whisk together the rolled oats, baking powder, ground cinnamon, nutmeg, ground ginger, fine sea salt, and 1/4 cup of the chopped pecans until evenly combined.
Whisk the Custard & Layer with Apples
  1. In a separate medium bowl, whisk together the oat milk, pure maple syrup, eggs, melted butter, and vanilla extract until smooth, pale, and slightly frothy.
  2. Scatter the diced Honeycrisp apples evenly across the bottom of the prepared baking dish. Spread the dry oat mixture evenly over the apples.
  3. Slowly pour the milk custard evenly over the entire dish, ensuring all dry oats are submerged and moistened. Tap the dish gently on the counter to eliminate air pockets.
Top & Bake to Golden Perfection
  1. Scatter the remaining 1/4 cup of chopped pecans and 1 tablespoon of turbinado sugar evenly across the top for a crackly caramelized crunch.
  2. Bake uncovered for 35 to 40 minutes, until the center is set, the edges are bubbly golden-brown, and a toothpick inserted into the center comes out clean.
  3. Let rest for 5 to 10 minutes before slicing into generous squares. Serve warm with an extra drizzle of pure maple syrup and a splash of cold cream or oat milk.
