Ingredients

Fudge Base
  • 1 14-ounce can sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 20 ounces semi-sweet chocolate
  • 3 tablespoons unsalted butter
Optional Toppings
  • flaky sea salt for sprinkling
  • 1/2 cup chopped nuts or crushed candy canes optional

Equipment

  • 8x8-inch baking pan
  • Heatproof bowl
  • Saucepan
  • rubber spatula

Method

Fudge Preparation
  1. Lightly grease an 8×8-inch baking pan. Line with parchment paper or aluminum foil, leaving an overhang.
  2. In a large heatproof bowl, combine sweetened condensed milk, vanilla extract, chocolate, and butter.
  3. Fill a saucepan with about 1/4 full of water and bring to a boil. Reduce heat to a simmer; place the bowl over the pot.
  4. Stir with a rubber spatula until chocolate is nearly melted, about 4 minutes.
  5. Carefully remove the bowl and stir until smooth, about 2 minutes.
  6. Stir in mix-ins if using, then spread fudge evenly in prepared pan.
  7. Refrigerate until set, about 2 hours. Remove using the foil overhang and cut into squares.
  8. If desired, use a butter knife to loosen the edges before transferring to a cutting board.
  9. Peel off parchment paper and slice into pieces. Serve immediately or store.
  10. If freezing, use an airtight container for up to two months.
