Chocolate Dipped Orange Peel

Ingredients
  

Orange Peel
  • 2 large oranges preferably organic
  • 1 cup granulated sugar for candying
  • 1 cup water for candying
Chocolate Coating
  • 8 oz dark chocolate at least 70% cocoa

Method
 

Prepare the Orange Peel
  1. Wash the oranges thoroughly and remove the peel in large strips, avoiding the white pith as much as possible.
  2. Cut the peel into thin strips, about 1/4 inch wide.
  3. In a saucepan, combine the water and sugar. Bring to a boil, then add the orange peel strips.
  4. Reduce heat and simmer for about 45 minutes until the peels are tender and translucent.
  5. Remove peels from syrup and place them on a baking sheet lined with parchment paper to dry for several hours or overnight.
Chocolate Coating
  1. Melt the dark chocolate using a double boiler until smooth.
  2. Dip each dried orange peel strip into the melted chocolate, ensuring it's fully coated.
  3. Place the chocolate-dipped peels back on the parchment paper and let them cool until the chocolate hardens.
