Ingredients
  

Steak
  • 1 pound flank steak or skirt steak
Chimichurri Sauce
  • 1 cup fresh parsley finely chopped
  • 1/4 cup fresh oregano finely chopped
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Lettuce Wraps
  • 8 leaves romaine lettuce or butter lettuce
Toppings
  • 1 medium tomato diced
  • 1/2 cup red onion thinly sliced

Method
 

Prepare the Chimichurri Sauce
  1. In a mixing bowl, combine parsley, oregano, garlic, red pepper flakes, olive oil, red wine vinegar, salt, and black pepper. Mix well and set aside.
Cook the Steak
  1. Preheat the grill to medium-high heat. Season the flank steak with salt and pepper.
  2. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  3. Remove from grill and let rest for 5 minutes before slicing.
Assemble the Wraps
  1. Slice the steak against the grain into thin strips.
  2. Place a few strips of steak in the center of each lettuce leaf.
  3. Top with chimichurri sauce, diced tomato, red onion, and avocado slices.
  4. Wrap the lettuce around the filling and serve immediately.
