Ingredients
  

Lasagna Layers
  • 9 sheets lasagna noodles no-boil or regular
Vegan Chicken Mixture
  • 2 cups shredded vegan chicken store-bought or homemade
  • 1 cup spinach fresh or frozen
  • 1 cup mushrooms sliced
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Tomato Sauce
  • 2 cups canned crushed tomatoes
  • 1 teaspoon basil dried
  • 1 teaspoon sugar to balance acidity
Cheese Layer
  • 1 cup vegan ricotta cheese store-bought or homemade
  • 1/2 cup nutritional yeast for cheesy flavor

Method
 

Prepare the Vegan Chicken Mixture
  1. In a pan, heat olive oil over medium heat. Add sliced mushrooms and sauté until soft.
  2. Stir in shredded vegan chicken, spinach, garlic powder, onion powder, oregano, salt, and pepper. Cook for 5-7 minutes until heated through.
Prepare the Tomato Sauce
  1. In a pot, combine crushed tomatoes, basil, and sugar. Simmer for 10 minutes.
Assemble the Lasagna
  1. Preheat the oven to 375°F (190°C). In a baking dish, spread a layer of tomato sauce.
  2. Layer 3 lasagna noodles over the sauce, followed by half of the vegan chicken mixture, half of the vegan ricotta, and a layer of tomato sauce. Repeat the layers.
  3. Finish with a final layer of noodles and top with remaining tomato sauce and nutritional yeast.
Bake the Lasagna
  1. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
  2. Let it cool for 10 minutes before slicing and serving.
