Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter cold, cut into cubes
  • 1 large egg yolk
Cherry Filling
  • 2 cups fresh or frozen cherries pitted
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
Oat Topping
  • 1 cup oats
  • 1/2 cup brown sugar light or dark
  • 1 teaspoon cinnamon
  • 1/2 cup melted butter

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, 1/4 cup granulated sugar, and cold butter until crumbly. Press mixture into the bottom of a greased baking dish.
  3. In another bowl, mix cherries, 1/2 cup granulated sugar, cornstarch, and lemon juice. Pour over the crust.
  4. In a separate bowl, combine oats, brown sugar, cinnamon, and melted butter. Sprinkle over the cherry filling.
  5. Bake for 30 minutes or until the top is golden brown.
  6. Allow to cool before cutting into bars.
