Ingredients
  

Pastry Crust
  • 1 sheet puff pastry thawed if frozen
Filling
  • 3 large onions thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar to aid caramelization
  • 1 cup heavy cream
  • 2 large eggs
  • 1 cup gruyère cheese shredded
  • 1 teaspoon thyme fresh or dried
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Onions
  1. Heat olive oil in a skillet over medium heat. Add sliced onions, salt, and sugar. Cook, stirring occasionally, until onions are caramelized, about 25-30 minutes.
Prepare the Tart
  1. Preheat the oven to 375°F (190°C). Roll out the puff pastry and fit it into a pie dish. Trim excess pastry.
  2. In a bowl, whisk together the cream, eggs, thyme, black pepper, and half of the gruyère cheese.
  3. Spread the caramelized onions evenly over the pastry, then pour the cream mixture on top. Sprinkle with remaining cheese.
Bake the Tart
  1. Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is golden brown.
  2. Allow to cool slightly before slicing and serving.
