Ingredients
  

Mushrooms
  • 4 large Portobello mushrooms stems removed
Filling
  • 1 cup Cherry tomatoes halved
  • 1 cup Fresh mozzarella cubed
  • 1/4 cup Fresh basil chopped
  • 2 tablespoons Olive oil for drizzling
  • 1 teaspoon Balsamic glaze for drizzling

Method
 

Prepare the Mushrooms
  1. Preheat the oven to 400°F (200°C). Clean the portobello mushrooms and remove the stems.
Make the Filling
  1. In a mixing bowl, combine the cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper.
Stuff the Mushrooms
  1. Place the portobello mushrooms on a baking sheet, and fill each cap with the tomato and mozzarella mixture.
Bake
  1. Bake in the preheated oven for 15-20 minutes, until the mushrooms are tender and the cheese is melted.
Serve
  1. Drizzle with balsamic glaze before serving.
