Candied Orange Peel

Ingredients
  

Orange Peels
  • 4 large oranges Use organic oranges if possible.
Sugar Syrup
  • 2 cups granulated sugar
  • 1 cup water
Coating
  • 1 cup granulated sugar For coating after cooking.

Method
 

Prepare the Orange Peels
  1. Wash the oranges thoroughly and remove the peel in large strips, avoiding the white pith as much as possible.
  2. Cut the peels into thin strips (about 1/4 inch wide).
Blanch the Peels
  1. Place the orange peels in a saucepan and cover with water. Bring to a boil and then drain.
  2. Repeat this blanching process two more times to reduce bitterness.
Make the Sugar Syrup
  1. In the same saucepan, combine 2 cups of sugar and 1 cup of water. Heat over medium until the sugar dissolves.
  2. Add the blanched orange peels to the syrup and simmer for about 45 minutes until the peels are translucent.
Coat the Peels
  1. Remove the peels from the syrup and let them cool slightly. Roll them in granulated sugar to coat.
  2. Place the coated peels on a parchment-lined baking sheet to dry for several hours or overnight.

Notes
