  • 1 cup enchilada sauce
  • 2 tablespoons tomato paste
Tortillas and Cheese
  • 8 pieces corn tortillas
  • 2 cups shredded cheese such as cheddar or Monterey Jack
Topping
  • 1 cup sour cream for serving

Method
 

Cooking Steps
  1. Sauté the onion in a large skillet over medium heat until translucent.
  2. Add minced garlic and cook until fragrant.
  3. Add ground beef to the skillet, seasoning with cumin, chili powder, salt, and pepper. Cook until browned.
  4. Stir in enchilada sauce and tomato paste, mixing well until heated.
  5. Warm corn tortillas slightly to make them pliable.
  6. Fill each tortilla with the beef mixture, roll them up, and place in a baking dish.
  7. Top rolled enchiladas with shredded cheese.
  8. Bake in a preheated oven at 350°F for 20 minutes or until cheese is melted and bubbly.
  9. Serve hot, topped with sour cream.
