Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 tablespoon cold water
Filling
  • 1 cup ground almonds
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt

Method
 

Prepare the crust
  1. In a mixing bowl, combine flour, butter, and powdered sugar. Mix until crumbly.
  2. Add the egg yolk and cold water, mixing until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Make the filling
  1. In another bowl, whisk together ground almonds, sugar, eggs, vanilla extract, almond extract, and salt until smooth.
Assemble and bake
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the chilled dough and cut into circles to fit the tartlet pans.
  3. Press the dough into the pans and fill with the almond mixture.
  4. Bake for 20-25 minutes or until the filling is set and golden.
  5. Let cool before serving.
